My daughter LOVES Mickey Mouse…she wants to dress like him, watch him on TV, and she sleeps with her Mickey Mouse stuffed animal every night. When I found out that it was Mickey Mouse’s 90th Birthday, I knew we had to celebrate! I bought some Eggo Mickey Homestyle Waffles from Walmart and we made some yummy Mickey Mouse Eggo Grilled Cheese Sandwiches for lunch.
This recipe is such a fun twist on how to use the Eggo waffles we all know and love. I rounded up some fun, simple ingredients to keep the kids happy and make a yummy sandwich for me too! My kids eat Eggo Waffles all the time for breakfast or a snack and it makes me feel good to know that Eggo Waffles now have colors and flavors from natural sources. This lunch idea is a wholesome and filling option that kids will love again and again.
These are so fun and very easy to customize based off of what you or your kid’s like on a grilled cheese sandwich. I hope you will share in the comments if you think of some more creative ingredients that we could try out in our Mickey Mouse grilled cheese sandwiches next time!
My ingredients are:
Sliced and Shredded Cheese
First, you allow the Eggo Mickey Homestyle Waffles to thaw out. If you try to make the grilled cheese sandwich with them while they are frozen, they won’t get crispy and golden brown. If you are in a hurry, you can pop them in the microwave for about 30 seconds. Spread butter on both sides of each waffle, place the waffle in a skillet Mickey Mouse-side down and then add your toppings. Finally, add the other waffle Mickey Mouse-side up and then allow the waffle to brown on both sides. I used a medium heat setting and that worked really great.
Allie likes just cheese and bacon on her Mickey Mouse sandwich and I like bacon, cheese, tomato, and pesto on mine! 🙂
Flip the sandwich after a few minutes and let both sides get crispy and golden brown before you remove them from the skillet. Serve immediately with apples and another fruit side and you have a great little lunch idea for your kids…and yourself! 🙂
She loves having her favorite character, Mickey Mouse, on her sandwich and loves to show it off to her brother. This is such a simple and fun way to celebrate Mickey Mouse’s 9oth Birthday and I think we are going to be making these sandwiches A LOT from now on. 🙂
